Serves 10 servings
Ingredients for the Citrus Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g fine sugar
Ingredients for the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, to garnish
Mandarin essential oil, as a final touch
Directions
Making the Cordial: Place all the items in a pot, heat until it reaches a gentle boil, stirring so the sugar melts. Then, turn off the stove and leave to cool fully. Pour to a sterilised bottle, close it and store in the fridge, it will last for about one month.
For the Premix: Combine all the liquids into a big jug, allow it to infuse for one hour, then pass it through , ideally through a fine cloth, making it completely strained.
When ready to serve: Measure 85ml from the batch mix to a cocktail shaker filled with ice, gently stirring gently for about 60 seconds to chill. Filter into a chilled martini glass or similar, decorate with some cranberries and complete it using a quick spritz with the mandarin essence over the drink.
